Mango Pickle Recipe
Ingredients( for 4~5 persons, for 12~15 days)
- Raw mango fruits 300gram. (Rajapuri suits better).
- Mustard seeds or powder one tablespoon
- Fenugreek or fenugreek seeds or Menthol ½ tablespoon
- Red chili powder 3 to2.5 TBS
- Salt 1.5 tablespoon or as needed.
- 4 garlic cloves.
- Oil sesame or peanut as per the personal preference.
Method
Wash and clean with cloth the fresh unripe mangos.
Roast fenugreek seeds on slow flame till pinkish color and emit the aroma.
Warm the oil and set to cool in case making huge quantity otherwise not necessary.
Don’t heat in case of cold-pressed oil.
Blend fenugreek and mustard to the coarse powder.
Cut the mango piece in cube shape not so small nor so big.
Mix all stuff fenugreek mustard powder, lightly crushed garlic cloves, red chill powder, salt and mango cubes in a bawl.
Pour the sufficient oil to deep the stuff completely.
Let it ferment for days or two and add more salt if necessary.
Fill in the sterilized glass jar and close with an airtight lid.
AAM ka Achar(Hinglish)
Kachcha AAM saamagree (4 ~ 5 vyaktiyon ke liye, 12 ~ 15 dinon ke liye)- kachche aam ke phal 300 graam. (raajapuree soot behatar)- sarason ke beej ya powder ek bada chammach
- methee ya metheee beej ya menthol oon bada chammach- laal mirch powder 3 to2.5 ek bada chammach- namak 1.5 bada chammach ya aavashyakata anusaar.- 4 lahasun ki kaliyan.- vyaktigat pasand ke anusaar til ya moongaphalee ka oil use kare.Note: - yah maatra ek chhotee ikaee ke lie hai. apanee maatra ke anusaar guna karen.tareeka
1. taaje kachche aam ko kapade se dhoen aur saaph karen.
2. methee ke daanon ko gulaabee rang aur mithi khushboo aanetak dheemee aanch par bhoonen.3. tel ko garm karen aur yadi aavashyak ho to badee maatra mein thanda karane ke lie set karen.4. cold-pressed oil ko garm na kare.5. methee aur sarason ke karkare powder mein milaye.6. aam ke madhyam size ke chaukoot tukada kaaten.7. ek bowl mein sabhee cheejen methee, sarason powder, halke se kuchale hue lahasun ki kaliyan, laal mirch powder, namak aur aam ke tukade mix kare.8. Mixture ko doob jaaye aisa paryaapt tel daalen.9. isko ek ya do ke liye ferment hone de.10. yadi aavashyak ho to adhik namak joden.11. Jantumukt kiye hue glaas jaar mein bharen aur hava bandh dhakkan se tight bandh karen.
