Bihari Sweet Laai: A Crunchy and Nutritious Treat
Laai is a crunchy and healthy sweet treat from Bihar, made with puffed rice (murmura) and jaggery. In Bengali, it is known as moya. Laai is a common dessert in Bihari homes throughout the year. It is also offered to the gods during festive occasions and rituals.
Making laai is simple and quick. You just need to melt jaggery in a pan with some water and cardamom powder. Ingredients:
Jaggery (Gur) - 250 grams.
Puffed Rice (known as Muri, Mudhi or Murmura in Hindi) - 125 grams (also can be substituted with roasted Poha, roasted rice or roasted gram).
Water - 250 ml.
Roasted Fennel Powder - 2 tsp.
a small piece of crushed Ginger, or few ginger drops.
Lemon juice - 2-3 drops.
Method:
The method of making Laai is very simple.
Boil water in a deep pan and add jaggery pieces to make a syrup.
Add 2-3 drops of lemon juice to cut the impurities.
When syrup gets prepared, add a drop of jaggery syrup in the water to check whether it turns into a ball shape.
Add puffed rice i.e. Murmura and mix well.
Make laddu from the hot stuff immediately, before it becomes stiff, but apply oil on the palm, or gloves can be used.
Lai aka Murmura_Laddu is ready to consume, especially for children on the occasion of the Makarsakaranti Festival.

पानी - 250 मिलीलीटर।
भुना हुआ सौंफ़ पाउडर - 2 चम्मच।

नींबू का रस - 2-3 बूंद।
तरीका:
लाई बनाने की विधि बहुत ही सरल है।
एक गहरे पैन में पानी उबालें और एक चाशनी बनाने के लिए गुड़ के टुकड़े डालें।
अशुद्धियों को काटने के लिए नींबू के रस की 2-3 बूंदें मिलाएं।
जब चाशनी तैयार हो जाती है, तो पानी में गुड़ की चाशनी की एक बूंद डालकर जांच लें कि यह गेंद के आकार में बदल गई है या नहीं।
फूला हुआ चावल यानी मुरमुरा डालें और अच्छी तरह मिलाएँ।
लड्डू को गर्म सामग्री से तुरंत बनाएं, कड़े होने से पहले, लेकिन हथेली पर तेल लगा लें, या दस्ताने का उपयोग किया जा सकता है।
