Recipe for Sweet Bedai Puri Of AGRA.

Ingredients for Popular Agra Bedai Puri:

For the Stuffing -

  • 1 cup mug of Mung Daal.
  • 1cup Urad Dal.
  • 1 tsp Green Chili.
  • Medium size piece of Ginger.
  • 1 tsp Cumin powder.
  • 1 tsp Red Chili Powder.
  • 1 tsp Black Salt.
  • 1 tsp Garam Masala.
  • 2 Tbsp Amchur Powder.
  • 1 tsp Turmeric.
  • 2 Tbsp Oil.
  • 1 tbsp Cumin.
  • 1/2 tsp Asafoetida.
  • 1/4 cup chopped Coriander.
  •  Salt as per taste.

For the Dough -

  • 3 cups wheat flour.
  • 1 cup Semolina.
  • 5 tbsp Oil.
  • Salt as per taste.
  • Water as needed.
  • More Oil for frying.

Method of Popular Agra Bedai Puri:

  1. First, soak the mung beans and the sesame seeds for six to seven hours.
  2. To make the dough mix wheat flour, semolina, salt, and oil. Knead well by adding the water as per the need.
  3. Add some oil in the dough and knead heavily and keep aside for a while by covering with the cotton cloths.
  4. To prepare a filler, filter the water from the lentils, add the red chili powder and grind well.
  5. Mix the turmeric, amchur, garam masala, black salt, Red Chili Powder in the paste of lentils.
  6. Make a bowl shape from the lump of the dough, and add the paste and cover it in round shape and press lightly. Make all Puris like this,
  7. Heat the oil and fry all bedai puris till it become golden brown.
The popular Bedai puri of Agra is ready. Serve it with Alu sabzi, Chutney, and spicy Curry.

स्टफिंग के लिए -

  • 1 कप मूंग दाल।
  • 1 लीटर उड़द दाल।
  • 1 छोटा चम्मच हरी मिर्च।
  • अदरक का मध्यम आकार का टुकड़ा।
  • 1 छोटा चम्मच जीरा पाउडर।
  • 1 छोटा चम्मच लाल मिर्च पाउडर।
  • 1 छोटा चम्मच काला नमक।
  • 1 छोटा चम्मच गरम मसाला।
  • 2 बड़े चम्मच अमचूर पाउडर।
  • 1 छोटा चम्मच हल्दी।
  • 2 बड़े चम्मच तेल।
  • 1 बड़ा चम्मच जीरा।
  • 1/2 छोटा चम्मच हींग।
  • 1/4 कप कटा हुआ धनिया।
  •  स्वादानुसार नमक।

आटा के लिए -

  • 3 कप गेहूं का आटा।
  • 1 कप सूजी।
  • 5 बड़े चम्मच तेल।
  • स्वादानुसार नमक।
  • आवश्यकतानुसार पानी।
  • तलने के लिए अधिक तेल।

लोकप्रिय आगरा बेदई पुरी की विधि:

  1.      सबसे पहले मूंग और तिल को छह से सात घंटे के लिए भिगो दें।
  2.      आटा गूथने के लिये मैदा, सूजी, नमक और तेल मिला लीजिये. जरूरत के अनुसार पानी डालकर अच्छी तरह गूंद लें।
  3.      आटे में थोड़ा सा तेल डालकर अच्छी तरह गूंथ लें और सूती कपड़े से ढककर कुछ देर के लिए रख दें।
  4.      भरावन तैयार करने के लिये दाल से पानी छान लीजिये, लाल मिर्च पाउडर डालिये और अच्छी तरह पीस लीजिये.
  5.      दाल के पेस्ट में हल्दी, अमचूर, गरम मसाला, काला नमक, लाल मिर्च पाउडर मिला लीजिये.
  6.      आटे की लोई से प्याले का आकार बना लीजिए और इसमें पेस्ट डालकर गोल आकार में ढककर हल्का सा दबा दीजिए. सारी पूरियां इसी तरह बना लें,
  7.      तेल गरम करें और सभी बेदई पूरियों को सुनहरा भूरा होने तक तलें।

आगरा की मशहूर बेड़ई पूरी बनकर तैयार है. इसे आलू की सब्जी, चटनी और तीखी करी के साथ परोसिये.
