Ingredients of Bengali Sweets Mishti Doi:
One liter of milk with high fat.
Cardamom - 4 (finely powdered).
Creamy Yogurt (Curd made at home would be better, otherwise bought from outside can also be used, no problem!)
Sugar
50 gms. (According to the original method, jaggery is used in Bengal,
then caramel is not necessary. However, nowadays sugar is often used.)
First
of all, heat the milk in a vessel until it comes to a boil, then slow
down the heat and while stirring the milk with a spoon, heat it till it
becomes half and thick. It is important to keep whisking the milk
evenly, otherwise the milk may stick to the bottom of the vessel.
Mix half the sugar (50 grams) and cardamom and the caramel in milk, stir well and make them coarse.
Then
add the mixture to another vessel; (A clay pot is often used in Bengal,
but it is not necessary.), And mix two spoons of curd in it and keep it
in a warm place for ten to twelve hours.
Your Mishti doi means sweet curd is ready to be eaten. Gratitude!

बंगाली मिठाई मिष्टी दोई की सामग्री:
ज्यादा फेट वाला एक लीटर दूध।
इलायची-४( बारीक पीसी हुई) ।
मलाईदार दही (घर पर ही जमाया हुआ दही ज्यादा अच्छा रहेगा, अन्यथा बाहर से ख़रीदा हुआ भी इस्तेमाल किया जा सकता है, नो प्रॉब्लम!)
चीनी ५० ग्राम।(मूल विधि के अनुसार बंगाल में गुड़ का उपयोग होता है, तब कारमेल जरुरी नहीं है। हालांकि आजकल चीनी ही बहुदा उपयोग में लायी जाती है।)
सब से पहले तेज आंच रखा कर एक बरतन में दूध को एक उबाल आने तक गर्म करे, फिर आंच को धीमा करे और देर तक दूध को चम्मच से हिलाते हुए वहा तक गर्म कीजिये जहा तक आधा और गाढ़ा न हो जाय। दूध को बराबर फेंटते रहना जरुरी है वर्ना दूध बरतन के तल से चिपक सकता है।
दूध में आधी चीनी (५० ग्राम) और इलायची का भूका और कारमेल मिलाकर कर अच्छी तरह हिलाकर एकरस कर दीजिये।
फिर यह मिश्रण को एक अन्य बरतन में डाल दे; ( बंगाल में अक्सर मिट्टी से बने बर्तन का उपयोग किया जाता है किन्तु वह जरूरी नहीं है।), और उसमे दो चम्मच दही मिलाकर ढँक दे और दस-बारह घंटे के किये किसी गर्म जगह पर रख दे।
आपका मिष्टी दोई अर्थात मीठा दही खाने ले लिए तैयार है।
