Gujarati Style Puran Poli Recipe with Pigeon Pea aka Red Gram Pea akaTur Dal aka Arhar Dal.

Puran Poli is a traditional dish of Maharashtra and Gujarat. It is a sweet flatbread filled with lentil filling. The difference between the two versions is the type of lentils used. Puran poli is made with chickpeas in Maharashtra and Pigeon Peas (Red Gram Pea) in Gujarat, known as Arhar Dal. Here's how to make Gujarati-style Pigeon Pea(Red Gram Pea) Puran Poli at home. It is a tasty and nutritious breakfast option that your kids will love.

Ingredients for Gujarati Puran Poli:

-To prepare the flour dough

  • 2 cups wheat flour
  • 2 tablespoons oil
  • Water as needed-

To prepare the filling

  • 1 cup Tuvar dal
  • 1 1/2 cups chopped jaggery
  • 7-8 Saffron fibers
  • 2 tablespoons ghee
  • 1/4 teaspoon cardamom powder
  • Wheat flour or rice flour for 1/2 cup ataman

Method of Gujarati Puran Poli:

  1. First of all, to prepare the wheat flour dough, knead the flour in a bowl, add oil for the mouth, knead the flour properly, then add water as required, prepare the flour like bread, prepare the loaf from it.
  2. Soak saffron stalks in a bowl with a little water. Wash the lentils, add 1.5 cups of water and cook till 3 whistles in the cooker. Open the lid after the pressure of the cooker decreases. Heat ghee in a pan and add chopped jaggery and boiled Tuvar dal. Cook for 10-12 minutes till it thickens, taking care not to get lumps in it. Add cardamom powder and mixed saffron and mix evenly. When the filling is ready, make balls of the same size.
  3. Weave a thick loaf of prepared dough with Ataman, put a filling in the middle of it, close the bag in the same way and take Ataman again and weave a medium-thick Puranpoli. Fry it evenly on both sides on a hot griddle. Serve the ghee book hot on top. It is fun to eat sour curry and loose lentils with Puranpoli. 

So a delicious Gujarati Puranpoli is ready.
