Raw turmeric is a powerful and healthful herb, because according to the research by aryuveda as well as Modern medical science it helps to treat stomach ulcers, reduces inflammation, Reduces skin impurity and desease. It has a anti-inflamatory properties.
Nutrition value of turmeric is as below:
0.91 grams protein.
0.31 grams fat.
6.31 grams carbohydrates.
2.1 grams fiber.
Here the #veg_recipe of raw turmeric. In Rajsthan and in Marwari community, this raw turmeric sabji is very popular. (It should be cooked on medium flame to preserve it's nutrient elements.)Optionly you can cook it with 2 cup of boiled tur lentile.
Initially, peel the skin of raw turmeric with a knife, and cut the turmeric into small pieces.
Heat the desi ghee(cream)in a pan.
Add 3 cloves, 2 bay leaves,3 cardamoms, 8 to 10 black peppers, one small piece of cinnamon, 1/4 cup chopped garlic, and saute well for a while.
Add 3 finely chopped green chilies, chopped raw turmeric, half cup of chopped ginger, and cook well for a while without adding water (or add little water if necessary). Check the turmeric by crushing with fingers whether cooked well or not.
Add grated tomato, cook more for a minute, add half a cup of green peas, one cup of curd, one tsp red chili powder, salt as per taste, cook for 2-3 minutes. Keep the vegetable stirring with a large spoon till cooked well.
Add 2 tsp of coriander seed powder, one bunch of chopped spring onion, and keep stirring the mixture for 1-2 minutes. Switch off the flame and take the pan off after 2-3 minutes.
Ghee(cream)would be visible floating on the surface. Take out that with a spoon to be used elsewhere.
