Malpua - A Delicious Dessert for Festive Occasions

Malpua is a traditional Indian sweet dish that is made with wheat flour, semolina, mava, milk, sugar, and spices. It is deep-fried in ghee and soaked in sugar syrup flavoured with saffron, rose essence, and rose water. It is garnished with dried fruits and rose petals and served with rabri or thickened milk.

Ingredients:

  • Wheat flour - 1 cup
  • Semolina - 1 cup
  • Sugar - 1 cup
  • Mava - 3 spoons
  • Milk - 1 and a half cup
  • Cardamom powder - half spoon
  • Saffron - 10 to 15 strands
  • Rose essence - 4 to 5 drops
  • Rose water - 2 spoons
  • Ghee - for frying
  • Dried fruits - for garnishing
  • Rose petals - for garnishing
  • Rabri - for serving

Method:

  1. In a large bowl, mix wheat flour, semolina, cardamom powder, and mava. If you don’t have mava, you can add 2 spoons of milk powder instead.
  2. Gradually add milk and whisk well to make a smooth batter. The batter should be of pouring consistency, not too thick or thin.
  3. To make the sugar syrup, take a saucepan and add sugar and enough water to cover it. Bring it to a boil and cook until it reaches a one-string consistency. You can check this by taking a drop of syrup between your thumb and index finger and stretching it. It should form a single thread without breaking.
  4. Add saffron, rose essence, and rose water to the sugar syrup and mix well. Keep the syrup warm on low flame.
  5. To make the malpuas, heat ghee in a flat frying pan over medium-high flame. Drop a ladleful of batter in the center of the pan and spread it slightly. Fry until golden brown on both sides.
  6. Drain the excess ghee and dip the malpua in the warm sugar syrup for a few seconds. Remove and place on a serving plate.
  7. Repeat with the remaining batter and syrup.
  8. Garnish the malpuas with chopped dried fruits and rose petals. Serve hot or cold with rabri or thickened milk.
