How To Prepare All Purpose Dry Hot Spices At Home? Garam Masala||


    Spice has a vital role in cooking any cuisine. Many items are cooked using the hot spice powder, known as Garam Masala in India, and the chef( and housewife) keeps that handy. Here is the post on the process of preparing the all-purpose hot spice powder. You can add or remove any ingredient as per your choice and as per your particular cuisine. So here is the method.

Ingredients for homemade all-purpose spice:

For roasting-

  • 1/2 coriander seeds.
  • 3 tbsp cumin seeds.
  • 3 to 4 dry red chilies.
  • 1 tbsp black pepper.
  • 1 mace(Javitri).
  • 4 small cinnamon sticks.
  • One black cardamom.
  • 8 green cardamom.
  • One nutmeg.
  • 10 cloves.
  • Two anise-star.
  • 1/4 cup Bengal gram (optional).
  • 1 tbsp fenugreek.
  • 2 tbsp dry fenugreek leaves.
  • 2 tbsp mustard seeds.

To be added after the grinding of spices-

  • 1 tbsp Red Kashmiri Chili powder,
  • 1/2 tsp ginger powder.
  • 1/2 tsp turmeric powder,
  • 1/2 tsp Asafoetida,
  • One tsp Salt,

Method of homemade all-purpose spice:

  1. Roast all the mixture by continuous flapping with a wooden spoon on low flame till dry well (except red Kashmiri chili powder; ginger powder; turmeric powder; asafoetida; and salt),
  2. Spread the mixture in a wide tray and cool down.
  3. Remove chili petiole (only after drying).
  4. Make a powder by grinding the dried mixture.
  5. Add red Kashmiri chili powder to the mixture and blend.
  6. Sieve the mixture in a bowl, grind sieve the residual grains again.
  7. Add ginger powder, turmeric powder, asafoetida, and salt.
  8. Mix well and store in a glass bottle.

Home-made all-purpose hot spice is ready.
