Mid Morning Snack Recipe: Dahi Vada With Rice And Black Lentil.

Dahi Vada, also known as Dahi Bhalla, is a delicious snack made from fried lentil balls that are soaked in creamy yogurt and topped with various chutneys and spices. This popular street food originates from North India and is often served cold as an appetizer or side dish during festive occasions. With its melt-in-the-mouth texture and a delightful balance of sweet, sour, spicy, and savory flavors, Dahi Vada is especially enjoyed in states like Gujarat and Maharashtra.

Ingredients for Dahi Vada:
- 1 cup rice flour (Alternatively, take all-purpose flour, but rice is better),
- 300gm black lentil (Urad Dal),
- 1 tsp chili powder,
- 1/4 tsp turmeric,
- 1 tsp Cumin powder,
- 1 tsp pepper powder,
- 1 /2 tsp shredded curry leaves,
- 1/2 tsp shredded green chilies,
- A shredded onion,
- 1 tsp garam masala(Blend of pungent Indian spices),
- A pack of Coriander leaves,
- 1 cup yogurt,
- 1 tsp normal salt,
- 1 tsp black salt,
- Edible oil or cream,
- Some water to make the batter.

Method of Dahi Vada:
-Making of Vada.
- Soak the black lentil in the water for at least an hour, grind it to make a thick-fine paste, and transfer it to a bowl.
- Add shredded green chilies, curry leaves(1/2 tsp), half shredded onion, asafoetida(1/2 tsp), rice flour (2 tsp), salt(1 tsp), and mix well to prepare the batter.
- Spread the oil on the butter paper in a tray, take a lump from the batter, and make a cookie shape of it. Deep fry it on medium flame, and keep reversing.
- Vada is ready.
- Take two scoops of thick curd in a bowl, add 1/4 tsp salt and 1/2 cup of water, and mix well.
- Dip the 'snack' in the curd liquid for about 20 minutes.
- Take it out and spread it on the tray.

- Add 2 cups of fresh churned Curd to the bowl, add black Salt and red Chilies powder, and mix well.
- Spread this mixer on the Vada, sprinkle the Jeera powder, chat powder, and red Chilies powder (each 1 tsp), then Garnish with Coriander leaves.
