Home-Made Tandoori Chutney Paneer Tikka ki vidhi.
Tandoori paneer tikka is a delicious and popular appetizer that consists of marinated and grilled paneer (Indian cottage cheese) cubes along with onion and capsicum. It is served with a spicy and refreshing green chutney made from mint, coriander, green chilies, and yogurt. This dish is easy to make at home and can be cooked in an oven, a grill, or a tawa (flat pan).
Ingredients for tandoori paneer tikka:
Paneer - 250 gm, cut into 1 inch cubes
Capsicum - 1 medium, cut into 1 inch pieces
Onion - 1 medium, cut into 1 inch pieces
Curd - 400 gm, whisked and strained
Besan (gram flour) - 2 tbsp
Mustard oil - 2 tbsp
Lemon juice - 2 tsp
Salt - to taste
Garam masala - 1/2 tsp
Chat masala or kebab masala - 1 tsp
Butter - 1 tsp
Kasoori methi (dried fenugreek leaves) - 1 tsp
Ingredients for green chutney:
Green coriander leaves - 100 gm, washed and chopped
Fresh mint leaves - 20 gm, washed and chopped
Green chilies - 6-7, chopped
Ginger - 1 inch, peeled and chopped
Garlic - 8-9 pods, peeled and chopped
Cumin seeds - 1 tsp
Black salt - to taste
Salt - to taste
Method for tandoori paneer tikka:
In a large bowl, add the curd, besan, mustard oil, lemon juice, salt, garam masala, chat masala or kebab masala, butter, and kasoori methi. Mix well to make a smooth and thick marinade.
Add the paneer cubes, capsicum pieces, and onion pieces to the marinade. Toss well to coat them evenly. Refrigerate for at least 2 hours or overnight for better results.
Preheat the oven to 200°C or the grill to medium-high heat. Line a baking tray with aluminum foil or grease a grill rack.
Thread the marinated paneer cubes, capsicum pieces, and onion pieces onto skewers. You can use metal or wooden skewers. If using wooden skewers, soak them in water for at least 30 minutes before using to prevent burning.
Place the skewers on the prepared baking tray or grill rack. Cook for about 15 to 20 minutes or until the paneer is golden and charred on the edges. Turn the skewers occasionally for even cooking.
Sprinkle some lemon juice and chat masala or kebab masala over the paneer tikka before serving.
Method for green chutney:
In a blender or food processor, add the green coriander leaves, mint leaves, green chilies, ginger, garlic, cumin seeds, black salt, salt, and a little water. Blend to make a smooth paste.
Transfer the chutney to a bowl and adjust the consistency by adding more water if needed.
Refrigerate the chutney until ready to serve.
