Actually, the meaning of the word 'Locho' in the Gujarati language is the mess. But once in the Surat city, a cook attempted to make a savory item but what get prepared was neither solid nor liquid form but what turned out was the strange crushed savory item of the flour of gram, which tasted too delicious. So it became popular in the name of 'Locho' means the savory dish which is in the crushed form. This is the exclusively popular item of Surat city, in the Gujarat state of India. Now it is a world-famous item and visitors of Surat city never miss a chance to taste 'Locho' once in a while.
Ingredients of Surati Locho:
- A bowl of lentils of a gram.
- One tablespoonful of gram flour.
- A teaspoon of crushed green chili.
- 1/4 teaspoon of turmeric powder.
- One teaspoon of baking soda.
- Chopped onion.
- Three tablespoons butter.
- Salt to taste.
- Water as needed.
- Rock salt as needed.
- Cumin powder as needed.
- Powder of black pepper as per taste.
- Finer kind wheat noodles, known as 'sev' in India.
- Coriander leaf.
- Spinach.
Method:
- First of all, keep the gram pulses for four hours in the water after washing 2-3 times.
- Then, add one teaspoon of gram flour, salt, baking soda, and turmeric powder in the paste, whisk well and keep aside for half an hour.
- Now make a loose paste with the blender machine.
- Add green chili and turmeric to it.
- Now pour some water in the pressure cooker, set the net in it to steam the paste. Apply the thin layer of oil on the plate and put the stuff of Locha in it and set it on the net.
- Allow the mixture to steam at least for ten minutes.
- Then penetrate the knife to check whether it is still sticky. If so steam more foe a while.
- Take out in the plate when hot and pour two to three tablespoons of liquid butter, spread 'Sev', the finer noodle type, chopped onion.
- Prepare the mixer of the powder of red chili, cumin, black pepper, and rock salt in a separate bowl and sprinkle as per the taste.
- Make a sauce (chutaney) by adding one teaspoon of 'Locho' with green chilies, coriander leaf, spinach, and sugar, salt -as per taste- in the blender machine.
- The world-famous Surati item Locha is ready to serve.
