Litti Chokha: A Rustic Bihari Delicacy.
Litti Chokha is a popular dish from the state of Bihar in India. It consists of litti, which are balls of whole wheat flour filled with sattu, roasted gram flour mixed with herbs and spices. Litti is baked over charcoal or wood fire and then dipped in melted desi ghee. Chokha is a spicy mashed vegetable preparation, usually made with potatoes, brinjals, or tomatoes. Litti Chokha has a rich and earthy flavor, similar to the Gujarati dish Umbadiyu, which is also cooked in a clay pot over the fire.

Note: In Gujarati language rice is pronouced as Chokha, but this bihari recipe is not of the rice. Vegetables as brinjal(eggplant) and tomatoes, optionally potato also, is the gredients of the bihari cuisine Chokha

Litti and Chokha is two different cuisines. Consuming the Litti with chokha is a tradition. Litti is a dough ball made up of whole wheat flour and stuffed with gram flour, pulses and mixed with herbs and spices like onion, garlic, ginger, coriander leaves, lime juice, carom seeds, nigella seeds and salt. It is baked over coal, wood, or in oven, and diped into ghee. Chokha is a cuisine made of either brinjal or potato or both. Often eaten with curd, pickles, and papad.

Sattu is the flour of the roasted gram. Sattu can be prepared by many other kinds of cereal also.

Ingredients for litti-chokha:

- Ingredients for Litti.

  • Dough:
  • Wheat flour - 2 cups
  • Ghee - 2 tsp
  • Salt -1/2 tsp
  • Water 

- Ingredients for stuffings.

  • Sattu (roasted gram flour powder)- 2 cups
  • Onion -1/4 cup
  • Ginger -1 tbsp
  • Garlic - 1.5 tbsp
  • Green chilli - 1 tbsp
  • Coriander leaves -1/4 cup
  • Carom seeds-1/2 tsp
  • Nigella seeds -1/2 tsp
  • Mustard oil -2 tbsp
  • lemon juice - 1 tbsp
  • Salt to taste
  • Any pickle masala - 1tbsp

- Ingredients for brinjal tomatoes chokha:

  • Brinjal - 1
  • Tomatoes -2
  • Garlic cloves - 3
  • Green chilli -2
  • Chopped green chilli -2
  • Chopped ginger - 1/2 tsp
  • Chopped garlic - 1 tsp
  • Salt to taste
  • Mustard oil - 1 tbsp
  • Coriander leaves - 2 tbsp

- Ingredients for green chutney:

  • Coriander leaves - 1/4 cup
  • Mint leaves -1/4 cup 
  • Tomato -1 
  • Green chilli -2
  • Ginger - 1 inch
  • Garlic cloves - 4
  • Salt to taste
  • Lemon juice -1 tsp
  • Salt to taste
