Perhaps most favorite and most used sauce in Indian cuisine is the Green chilies Sauce. The pungent cum sweet taste makes it a favorite to all - kids, women, and elders. Here is the recipe for the first of the five homemade sauces.

Ingredients for Green chilies Sauce:

  • Green Kashmiri chilies - 50 grams.
  • Mild pungent type of chilies - 100 grams.
  • High pungent type of chilies - 100 grams.
  • (Note:  The ratio of chilies could change as per your choice.)
  • Oil - 1 tbsp.
  • Garlic - 15 buds or more as per choice.  
  • Ginger - 2 small, grated.  
  • Cumin powder - 1/2 teaspoon.
  • Salt as per the taste.
  • Some Water
  • Sugar - 3 tbsp.
  • Vinegar - 4 tbsp.

Method of Green chilies Sauce:

  1. Wash all the chilies with water two-three times and clean with a cotton cloth. Chop all the chilies into small pieces.
  2. Initially, heat the oil on a high flame, then turn it to medium. Add all garlic cloves, ginger, chilies, and fry for 2-3 minutes. Add cumin powder, salt, and stir. Let it cooked for a minute or two.
  3. Add 1/2 cup of water and cook for 8-10 minutes with a lead of the pan closed.
  4. The water should evaporate completely, and the mixture should become soft.
  5. Add all the sugar and stir for a while, then turn the flame off. Let the mixture get cooled.
  6. Grind the mixture after adding half of the vinegar,  and regrind after adding the rest of vinegar, till the mixture turns into gravy.
  7. Keep your green chilies sauce in the bottle of glass with a tight cap.
  8. Enjoy with other savory cuisines.


Homemade Red Chilies Sauce||


    Like green chili sauce, the red chili sauce is a favorite item of the kitchen.  The taste of the red chili sauce is marvelous. Due to the red color, this sauce looks attractive. Here is the recipe for the second of the five homemade sauces.

Ingredients for Red Chilli Sauce:

  • Red dry chilies - 150 grams.
  • Oil - 1 tbsp.
  • Garlic - 15-20 buds.
  • Ginger - 1 small.
  • Cumin Powder - 1/2 teaspoon.
  • Sugar - spoon.
  • Vinegar - 4 tbsp.
  • Some Water.
  • Salt - As per taste.

Method of the red Chilli Sauce:

  1. Wash the chilies 2-3 times with water. Dip the red chilies in hot water for 30 minutes.
  2. Then take out the water in a pot for future use.
  3. Heat oil on a high flame, then turn the flame intensity to medium.
  4. Add garlic cloves, chopped ginger, and fry for 2-3 minutes.
  5. Add red chilies, and cook more for 2-3 minutes.
  6. Add water from the pot, cumin powder, salt, and mix well.
  7. Cook for 10 minutes on low flame with the lid of the pan closed.
  8. Water should evaporate completely.
  9. Add sugar and mix well.
  10. Turn the flame off but keep the pan on the stove until it gets cooled.
  11. Grind the mixture after adding 50% vinegar.
  12. Regrind after adding the rest of the vinegar.
  13. Strain the mixture and fill in an airtight glass bottle.
  14. Enjoy with other cuisines.

    Soya beans are protein-rich vegetable. The delicious sauce can make from soy with caramelized sugar. The third from the five sauces recipes presented here for you.


Ingredients for Soya Sauce:

  • Sugar - 5 tbsp.
  • Soybean Flour - 1 tbsp.
  • Vinegar - 4 tbsp.
  • Salt - as per taste.
  • Some water.

Method of Soya Sauce:

  1. Initially, prepare a caramel by heating the sugar on medium/low flame in a pan. It will melt and will turn into dark color.
  2. Add 2 cups of water to the caramel and stir to make a dark red/brown colored liquid.
  3. Roast the soy flour in another pan and prepare a slurry by adding 2 cups of water. Stir the liquid vigorously while boiling to prevent the creating of lumps.
  4. Add soy flour slurry, 1/4 cup of vinegar, and salt, then boil on medium flame till it turns a little thick.
  5. Turn the flame off, and don't take off the sauce from the gas till it gets cool.
  6. Strain in a pot and store in an air-tight glass bottle.

Tomato is the vegetable that most suitable for sauce. Its combination with pungent chilies makes it an exclusive supplement dish for lunch, dinner, and breakfast. Here the fourth recipe is presented for you.

Ingredients for tomato chili sauce:

  • Tomato - 2 kg
  • Red Chili - 2 tbsp.
  • Kashmiri Red Chili Powder (for red color) - 1 tbsp
  • Garlic - 25 buds   
  • Ginger -  2 inch
  • Onion - 1
  • Cinnamon - 2-3  
  • Clove - 1 teaspoon.
  • Black Pepper - 1 tbsp.
  • Star Anise - 2 or 3.
  • Nutmeg - 1centimeter.
  • Green Cardamom powder - 2 teaspoons.
  • Vinegar - 2 cups.
  • Sugar - 250-300 gram
  • Some water.
  • Black Salt - 1/2 tbsp.
  • Salt - As per taste.

Method of tomato chili sauce:

  1. Choose the organic type of tomatoes to make a good quality sauce. Wash the tomato 2-3 times with water.
  2. Crush cinnamon, cloves, black pepper, star anise, nutmeg, and green cardamom. Fill it in the cotton bag, and bind tightly.
  3. Cut the tomatoes, Garlic, Ginger, Onion, and Red Chilies into small pieces.
  4. Put the mixture into the pan and cook for 1-2 minutes on the high flame with the lid closed. Tomatoes release the liquid, so no need to add water. However, add little water if necessary.
  5. Then dip the cotton bag of crushed garam masala into the mixture.
  6. Let the mixture boil approximately 5-6 minutes, then take the bag of garam masala out.
  7. Strain the gravy after cooling.
  8. Grind it to make a slurry.
  9. Add half quantity of sugar and vinegar and salt and black salt, then cook for 2-3 minutes.
  10. Add the rest of the sugar and vinegar and the powder of Kashmiri chilies to the slurry.
  11. Cook it for 5 minutes with a lid closed on medium flame.
  12. Let the sauce cool down before filling in an air-tight glass bottle.
  13. Enjoy the tomato chili sauce with other savory cuisines.

However, all the fruits have their specialty regarding their taste, but the apple is exclusive. (As per my opinion, Mango too). The last but exclusive recipe is for the applesauce.  At the end of the post, the easy recipe for apple sauce is available.

Ingredients for apple sauce:

  • Kashmir apples ( or whatever available) - 10.
  • Nutmeg (Crushed) -  0.5 centimeter.
  • Kashiri red chili powder(optional, for color only) - 2 teaspoons.
  • Cinnamon sticks - 2.
  • Green cardamom - 2.
  • cummin powder - 2 teaspoons.
  • Lemon juice - 2 teaspoons. ( or apple vinegar)
  • Sugar - 2.5 cups.
  • Some Water
  • Rock salt - 1 teaspoon.
  • Salt - as per taste.

Method of apple sauce:

  1. First of all, peel the skin and remove the center part, which contains the seeds,  with a knife. Cut them into small pieces.
  2. Boil the pieces of the apples after adding cinnamon sticks, sugar, crushed nutmeg and cardamom, cumin powder, Kashmiri red chili powder, and both type of salt at high temperatures for 5 minutes.
  3. Boil on low temperature for 15-20 minutes till the apple gets soft, then remove cinnamon stick.
  4. Let it cool then, blend with a hand blender or in the grinder.
  5. Add lemon juice( or vinegar).
  6. Fill in the clean air-tight glass container.
  7. Add more sugar if needed to make the sauce sweeter and thicker.
  8. Enjoy with bread or other cuisines.
  9. Optionally, Butter and any flavor can add to the sauce as per your choice.

Bonus Recipe

An easy applesauce recipe.

  1. Grates the apple cores and cook with sugar, cinnamon stick, and sugar for 15-20 minutes on high flame in a closed pan.
  2. Remove the cinnamon sticks later.
  3. Add lemon juice after cooling.
  4. No other spices are needed.
