Mostly lotus flowers grow in village ponds. After sorting its leaves, the part which remains in the core is called lotus cucumber. Lotus cucumber vegetable is used to make in the Indian families, but here I am going to tell the method of lotus stalk vegetable. Its dishes are tasty, and its vegetables are very nutritious.

Some useful information about its nutritional value: The stalk has many but is a good source of Vitamin C. It also contains essential minerals like zinc, magnesium, copper, and iron. The vegetable of lotus stalk keeps the respiratory system healthy. It is a low-calorie and high fiber diet.

Ingredients for spinach curry with lotus stalks:

  • Spinach vegetable - one kg.
  • Lotus-core-and-stem-also-called-as-stalk-is-best-for-veg-dish-with-spinach.
    Lotus-core-and-stem
    300 g Lotus Stalk.
  • 2 grated onions.
  • Salt - to taste.
  • 2 tbs Cayenne Powder.
  • 2 tbs Anise Powder.
  • 1 tsp Ginger paste.
  • 1 tsp Cumin.
  • 1/4 tsp Asafoetida.
  • Mustard oil - as needed.

Method of spinach curry with lotus stalks:

  1. Peel the stalks out, and cut them into small pieces. Finely chop the spinach. Rinse both in water two to three times.
  2. Heat the oil on high flame in the woke, and fry the pieces of lotus stalks, and set it aside.
  3. Saute cumin seeds with grated onions with oil into the cooker to get pinkish color.
  4. Add chopped spinach and heat till the water evaporates.
  5. Add ginger paste, asafoetida, cayenne-powder, anise-powder, and salt, and cook for 5 to 7 minutes.
  6. Add the stem pieces and black cumin and cook for another 5 minutes on a slow flame, stirring constantly.
Now spinach curry with lotus stalk is ready. Have it with casserole or bread.
