Crispy-Aloo-Potato-Sweet-Jalabi. |
Wafer made with potato is famous, but an Indian sweet like Jalebi also can be made with potato. It is very tasty, crispy.
(for 6 people)
Ingredient for Crispy-Potato-Aloo-Jalebi:
- Medium Size Potato (well boiled and crushed) - 6.
- Refined Wheat Flour(*RWF) - 300 grams.
- Sugar - One Kg.
- Yogurt - 500 grams.
- Cardamom Powder - 6.
- Baking Soda or Eno - 2 tsp.
- Saffron - 1 tsp.
- Food Color - 1/4 tsp.
- Edible Oil - 500m. or as needed.
- Water.
*RWF = Refined Wheat Oil or All-Purpose Flou or MAida (in An Indian language).
Method for Crispy-Potato-Aloo-Jalebi:
Preparation of the batter-
- Grind the crushed boil potatoes and make a loose paste type.
- Mix the potato paste with *RWF, yogurt(300 grams), baking soda, or Eno (2 tsp), and put it aside for a while after covering with the cotton cloth for the yeast.
Preparing of Sugar Syrup-
- Pour water into the vessel, add sugar, cardamom powder, saffron (one tsp), and boil to make a light golden thin syrup.
Preparation of the sweet: Jalebi -
- Fill the batter in the cone or into the plastic bottle.
- Pour an edible oil into a wok and heat on the medium flame. Release the batter through a cone or bottle, moving in a circular motion to obtain the shape of Jalebi.
- Let it fry for 5-7 minutes till the color gets golden.
- Dip the Jalebi into the sugar syrup one by one and let it keep for at least 10 minutes.
Serve Crispy-Potato-Aloo-Jalebi to the family on a plate along with any savory dish.
