Jalebi - A Crispy and Juicy Indian Sweet

Jalebi is a traditional Indian sweet that is made by deep-frying batter in spiral shapes and soaking them in sugar syrup. They are crispy on the outside and juicy on the inside, with a golden color and a tangy taste. Jalebi is often served hot with rabri, a thickened milk dessert, or cold with milk or yogurt. It is a popular festive treat that can be enjoyed at any time of the day. Jalebi is also known as zulbia, jilapi or jilawii in different regions of India. Ingredient for Crispy-Potato-Aloo-Jalebi:

  • Medium Size Potato (well boiled and crushed) - 6.
  • Refined Wheat Flour(*RWF) - 300 grams.
  • Sugar - One Kg.
  • Yogurt - 500 grams.
  • Cardamom Powder - 6.
  • Baking Soda or Eno - 2 tsp.
  • Saffron - 1 tsp.
  • Food Color - 1/4 tsp.
  • Edible Oil - 500m. or as needed.
  • Water.

Method for Crispy-Potato-Aloo-Jalebi:

Preparation of the batter-

  1. Grind the crushed boil potatoes and make a loose paste type.
  2. Mix the potato paste with *RWF, yogurt(300 grams), baking soda, or Eno (2 tsp), and put it aside for a while after covering with the cotton cloth for the yeast.

Preparing of Sugar Syrup-

  1. Pour water into the vessel, add sugar, cardamom powder, saffron (one tsp), and boil to make a light golden thin syrup.

Preparation of the sweet: Jalebi -

  1. Fill the batter in the cone or into the plastic bottle.
  2. Pour an edible oil into a wok and heat on the medium flame. Release the batter through a cone or bottle, moving in a circular motion to obtain the shape of Jalebi.
  3. Let it fry for 5-7 minutes till the color gets golden.
  4. Dip the Jalebi into the sugar syrup one by one and let it keep for at least 10 minutes.

Serve Crispy-Potato-Aloo-Jalebi to the family on a plate along with any savory dish.
