Veg Recipe For Protein-Rich Soybean| A Better Substitute Of Nonveg For Vegan|


Nutrient-rich soybean gravy can be
a substitute for meat for vegetarians. 

Soybean chunks, also known as soya granules or soya bean nuggets (soybean badi in Hindi). Soybeans are rich in protein. It contains more protein than meat. It is the only vegetarian food that provides all the essential amino acids to our body. Soybean has also called veg-meat because it contains all the amino acids of any other vegetable. Soybeans are also rich in vitamins and minerals. Therefore it's good to consume soybeans once or twice a week so the family members can get good nutrition. Soybean has used to make milk and curd. As an alternative to milk/curd, vegans like soybean milk and soybean curds. Soybean also has many medicinal properties. In dry form, soybean chunks have a rough texture. So, they should be soaked in hot water for 20-30 minutes cooking.

Ingredients for Soybean Chunks Recipe:

  • 125 gm Soybean.
  • 2 Glasses of hot Water.
  • 2 tbsp cooking oil.
  • 1tbsp Cumin.
  • 1/2 tbsp Garlic (grated).
  • 1/2 tbsp Ginger (grated).
  • 0.5 tsp turmeric,
  • 3 to 4 Green chilies.
  • 2 Onions (grated).
  • 2 Potatoes (grated).
  • 2 Tomatoes(Organic is better).
  • 2 tbsp Coriander powder.
  • 1/2 tsp Gram Masala.(Indian name of Hot spice composition, readily available in market).
  • 1/2 tbsp turmeric.
  • 1/2 tbsp Kashmir red chili powder for color.
  • 1/2 tbsp Chhola Masala(Chick pea spice, optional for a flavor, readily available).
  • 1 tsp salt as per choice.
  • Mint and Coriander leave to garnish (optional).
  • A glassful of Water.

Mathod of Soybean Chunks Recipe:

  1. Boil the soybean chunks with water for 7 to 10 minutes in a closed-lid vessel. Let soak water for a while to soften it. Then wash two-three times will cold water, then squeeze water outs and dry the soybean chunks.
  2. Put a spoonful of oil in the frying pan. Add all the soybean chunks and two pinches of salt in the oil, and shallow fry it on medium flame. Don't fry too much, or else they will turn flat. Then take out all in the bowl.
  3. Again put oil in the frying pan, and let it get hot. Put the cumin in. When cumin starts to crackle, add finely chopped ginger, garlic, and green chilies, and fry well.
  4. Add the chopped onions into the frying pan with the spice mixture, and fry until they get slightly pink, not brown.
  5. Now prepare the spice composition. One and a half tsp of coriander powder, 1/4 teaspoon of Garam masala, and turmeric powder, half tsp of red chili powder in the bowl. Optionally, add about half a teaspoon of Chickpea masala for good flavor.
  6. Add a little water to the spices and mix well. Add it to the onion in the frying pan, and roast the onion-spices mixture until it releases the oil and smells punty. Add potatoes and fry while stirring with spices for about a minute or two. Fry potatoes till they become soft. Do not cook much.
  7. Finally, add fried soybean chunks. Pour a cup or two of water into it. Add little more water afterward if necessary. Add salt as per taste and mix, and after covering it, cook on low flame until the potatoes and soybeans chunks have cooked well.
  8. At last, put chopped tomatoes in it, and cook it for 2 minutes more until tomatoes become soft.

The Soybean Chunks Vegetable is ready. It's a nice gravy, or less if you want to.

Note: Add the tomatoes last because of their acidic nature potatoes will take more time to cook.
