Recipe for Thecha: A Traditional Spicy Chutney from Maharashtra
Maharashtrian Thecha Chutney is a fiery, flavorful condiment packed with the smokiness of roasted peanuts, aromatic garlic, and the heat of green chilies. Ingredients
- Big green chilies (hot or mild, as per taste): 5 to 7
- Garlic cloves: 10
- Salt: As per taste
- Roasted peanuts (skin removed): 50 grams
- Cumin seeds: 1 teaspoon
- Cooking oil: 2 to 3 tablespoons (as needed)
Method of Preparation
1. Preparation of Chilies
Wash the green chilies thoroughly and remove their stems. Cut them into three pieces each and set them aside on a plate.
2. Tempering
Heat cooking oil in a pan on medium flame. Once the oil is hot, add the cumin seeds and let them crackle and release their aroma.
3. Cooking Chilies and Garlic
Add the chopped green chilies to the pan. Before the garlic turns golden, add the garlic cloves. Stir and let the chilies and garlic cook on a medium flame for 3 to 4 minutes, ensuring they soften slightly.
4. Adding Roasted Peanuts
Add the roasted peanuts (skin removed) to the mixture. Continue to cook on a medium flame for 1 to 2 minutes while stirring. Add salt to taste during this step. Cover the pan with a lid to allow the flavors to infuse properly.

After cooking the mixture to perfection, let it cool down completely, allowing all those delicious flavors to settle in. Once cooled, transfer the mixture to a grinder. Grind it coarsely for a slightly textured chutney or to your desired consistency.
