Kesar Jalebi Recipe for Dussehra Festival|| A famous sweet of India||

Famous-Indian-Sweet-Jalebi.

Jalebi is a famous typical Indian sweet. Here is the recipe for the Jalebi, a sweet. No artificial colors or baking soda have been used in this, although the leavening of the solution takes time. (8 to 10 hours). If you are in a hurry, you can use baking soda.

Ingredients for Kesar Jalebi:

  • Refined Wheat Flour(All-Purpose Flour) - 2 cups.
  • Cream(Desi Ghee) - 1 tbsp.
  • Saffron fiber - 30
  • Pistachio powder - 2 tsp.
  • Cardamom powder - 2 tsp.
  • Sugar - 4 cups.
  • Water - 2-3 bowls.
  • Rosewater - a small bottle.
  • Lemon juice - 1/4 tsp.

Method to make Kesar Jalebi:

  1. Add ghee and saffron (10 strands) to refined wheat flour, add water little by little and make a medium-thick batter. Then cover it with a cloth for 8-10 hours and keep it aside for the rising of the yeast. If you want to make it fast, you can add baking soda and food coloring (a little bit of both).
  2. To prepare the sugar syrup, put 2-3 cups of water in a vessel, add some strands of saffron, cardamom powder, and sugar. Boil the sugar syrup till it becomes medium-thick. Then add rose water to the sugar syrup. By adding cardamom seeds and rosewater, the syrup will become aromatic, the color of the liquid will become light golden due to the saffron fibers. When the sugar syrup gets ready add 2 tsp of lemon juice and stir it well before taking it off the stove.
  3. Meanwhile, check the batter for the rising of the yeast. If it is too thick, then add water little by little and make it medium thick again.
  4. Cover a plastic bag on glass, pour the mixture into it, make a cone of the bag, cut for the hole of 4 to 6 ml on its point. Instead of a plastic bag, you can take a plastic bottle to make the batter extractor by making a hole (4-6 ml) in its lid.
  5. Heat the oil in a pan at medium temperature, and release the batter into the oil with extractor in a circular motion to make a round-shaped Jalebi. Fry until the color of it turns light golden.
  6. Then dip the hot Jalebis in sugar syrup.
  7. Serve Jalebis on a plate and sprinkle pistachio powder and saffron strands on top.

Delicious, flavorful Jalebi sweets are ready. Eat it with hot Fafda
In India, especially in Gujarat, it is customary to eat Jalebi and Fafda on the day of Dussehra.
