This traditional sherbet is a natural remedy for many heat-related issues during extreme summers. Cooling in nature, it helps prevent problems like nosebleeds, stomach heat, and more. Learn how to make this refreshing summer drink using fennel (saunf) and sugar candy (mishri).

Ingredients

  • 1 cup thick fennel seeds (saunf)
  • 500 grams sugar candy (mishri), broken into small pieces
  • 5–6 green cardamom pods (for fragrance)
  • ½ cup water (adjust as needed)

Instructions

  1. Prep the Mishri: Break sugar candy into small pieces. Remove any threads if present.
  2. Grind: In a mixer grinder, blend the sugar candy with cardamom into a fine powder. Set aside.
  3. Prepare Fennel Paste: Without adding water initially, grind the fennel seeds into a rough paste. Gradually add water to make a fine paste.
  4. Combine: Mix the fennel paste with the powdered mishri and a little more water as needed. Stir well to form a smooth, syrupy paste.
  5. Strain: Filter the mixture to remove coarse particles, leaving a smooth, fine syrup.
  6. Store: Transfer to a glass container and store in the refrigerator. Use within one day, as the syrup is uncooked and fresh.

To Serve

Mix 2–3 tablespoons of the syrup in either:

  • Cold water – for a refreshing fennel drink
  • Chilled milk – for a richer, creamier variation
