Spicy Gravy Brinjal Veg With Potato|| आलू के साथ मसालेदार ग्रेवी बैंगन की सब्जी ||


Brinjal is such a vegetable that it immediately grabs our attention due to its shape and color. You can make vegetable of it with gravy, or make slices and fry it with spices, and grind it to make the gravy. It's a popular vegetable in an Indian family. Its English name is brinjal or eggplant. Many species of brinjals are grown, known by different names like brinjal, eggplant, or aubergine; in India, it is usually called brinjal.

Brinjal is rich in many vitamins, enzymes, and minerals. Some of its nutritional value is given below:

Any type of brinjal cuisine is better for enhancing strength and immunity. It is a vegetable for winter. It is also considered good for skin and hair. It is an Antioxidants and a good source of fiber, potassium, manganese, and copper.

Ingredients for Spicy Gravy Brinjal Veg With Potato:

  • Edible oil-4 tbsp.
  • Brinjal (chopped)-2  
  • Potato (chopped)-2
  • Bay leaf-2
  • Cumin-1 tsp.
  • Cinnamon-2 small pieces.
  • Cardamom-2 pods.
  • Asafoetida-pinch full.
  • Onion (finely chopped)-One.
  • Ginger-Garlic Paste-1 tsp.
  • Turmeric-half tsp.
  • Cayenne Powder-1tsp.
  • Garam masala-half tsp.
  • Salt-as per taste.
  • Tomato (finely chopped)-2.
  • A glass cup of water.
  • Coriander (finely chopped)-2 tbsp.
  • Dried Fenugreek Leaves (crushed)-1tsp.

Method for Ingredients for Spicy Gravy Brinjal Veg With Potato:

  1. Heat 2 tbsp oil in the cooker, and add the chopped brinjals and saute on medium flame till brinjal softens and brown spots appear.
  2. Then after adding the half tsp salt and saute more for a minute to make brinjal more delicious. Put the roasted brinjal aside for a while.
  3. Add all chopped potato to the same cooker, and roast on medium flame till the potatoes turns golden brown and crisp. Put all fried potatoes on the net to strain the oil out.
  4. Add a bay leaf, cumin, small pieces of cinnamon, pods of cardamom, and a pinch full of asafoetida in the cooker, and saute on low flame till spices turn aromatic.
  5. Then, add onion and ginger-garlic paste, and fry till the onions turn golden brown.
  6. Then, add turmeric,  cayenne powder, garam masala, and ½ tsp salt, and saute to make the spices turn aromatic.
  7. Add all chopped tomatoes, and cook till they turn soft and mushy. After that, add fried brinjals and potato pieces, dried fenugreek leaves, and a glass of water to the cooker. Stir gently to prevent breaking of the brinjal cuts.
  8. Close the lid and cook for 10 minutes or until the brinjal becomes soft.

Serve hot with casserole or bread after garnishing coriander leaves.

Mostly lotus flowers grow in village ponds. After sorting its leaves, the part which remains in the core is called lotus cucumber. Lotus cucumber vegetable is used to make in the Indian families, but here I am going to tell the method of lotus stalk vegetable. Its dishes are tasty, and its vegetables are very nutritious.


Some useful information about its nutritional value:

The stalk has many but is a good source of Vitamin C. It also contains essential minerals like zinc,
magnesium, copper, and iron. The vegetable of lotus stalk keeps the respiratory system healthy. It is a low-calorie and high fiber diet.

Ingredients for spinach curry with lotus stalks:

  • Spinach vegetable - one kg.
  • 300 g Lotus Stalk.
  • 2 grated onions.
  • Salt - to taste.
  • 2 tbs Cayenne Powder.
  • 2 tbs Anise Powder.
  • 1 tsp Ginger paste.
  • 1 tsp Cumin.
  • 1/4 tsp Asafoetida.
  • Mustard oil - as needed.

Method of spinach curry with lotus stalks:

  1. Peel the stalks out, and cut them into small pieces. Finely chop the spinach. Rinse both in water two to three times.
  2. Heat the oil on high flame in the woke, and fry the pieces of lotus stalks, and set it aside.
  3. Saute cumin seeds with grated onions with oil into the cooker to get pinkish color.
  4. Add chopped spinach and heat till the water evaporates.
  5. Add ginger paste, asafoetida, cayenne-powder, anise-powder, and salt, and cook for 5 to 7 minutes.
  6. Add the stem pieces and black cumin and cook for another 5 minutes on a slow flame, stirring constantly.
Now spinach curry with lotus stalk is ready. Have it with casserole or bread.

Here is an easy and quick recipe for Alu, aka, Potato Tikki with crushed almonds for breakfast.

Ingredients for Potato_Almond_Tikki:

  • Big size potatoes - 3 to 4.
  • Chopped Onion - 2 to 3.
  • Chopped coriander leaves- One cup.
  • Chopped green chilies - 3.
  • salt as per taste.
  • Special Homemade Masala(See here for recipe).
  • Roasted  & crushed Almonds - 6 to 7.
  • Chickpea flour - 2cup.
  • Edible Oil for frying.
  • Some water to wet the palm.

Method of Potato_Almond_Tikki:

  1. First, take 3-4 big size potatoes and wash well with water.
  2. Boil in the water and peel the potato out.
  3. Mash the core of the potatoes and make a paste.
  4. Add crushed almonds, onions, chilies, coriander leaves, readymade spice, salt, and kneed to make a loft.
  5. Wet the palms and make medium size balls of the loft, and press gently to make the shape of the Tikki, aka button.
  6. Add the turmeric powder, garlic paste, readymade spice, and salt, and make a medium-thick batter by adding the water gradually.
  7. Fry with oil on high flame till color turns to a golden brown.
  8. Potato Tikki is ready to eat with various sauces of your choice.

Onion Dal Pakora Recipes||


    Onion_Dal_Pakora,(an Indian savory item) can be prepared with chickpea lentils and red lentils. It is a good source of protein and so delicious that it would be a favorite item for the kids. Try it in your kitchen.

Ingredients for Onion Dal Pakora:-

  • Chickpea Lentil - 2 cups.
  • Red Lentil - 1 cup.
  • Onions - (chopped).
  • Spinach Leaves - 1 cup(chopped).
  • Coriander Leaves - 1 cup(chopped).
  • Green Chillies - 2(chopped).
  • Salt -  as per taste.
  • Readymade Spice Powder at home ( see here for recipe).

Method of Onion Dal Pakora:

  1. First, dip all the lentils for at least two hours after washing with two or three times with water.
  2. Then strain the water out, and grind without adding water.
  3. Take it out into the bowl and churn until it turns into a smooth paste of bright yellow color.
  4. Add onions, spinach leaves, coriander leaves, green chilies, pakora spice powder, and salt, and mix well.
  5. First, heat the oil in a frying pan on a high flame; then fry the pakoras.
