Ingredients for Fenugreek carrot green Casserole:

  • Rice - 1 cup.
  • A carrot (chopped) - 1.
  • Fresh fenugreek leaves (chopped) - 1/2 cup.
  • Green coriander (chopped) - 1/4 cup.
  • Tomato (chopped) - 1.
  • Medium size onion (chopped) -1.
  • Dry red chili powder as per taste.  
  • The paste of garlic and ginger - 1 tsp.
  • Cumin - 1/2 tsp.
  • Cloves - 2 to 3.
  • Pinch of Turmeric.
  • Garam Masala - 1/4 tsp.
  • Ghee - 1 tsp.
  • Salt as per taste.
  • Water as per need.

Method of Fenugreek carrot green Casserole:

  1. Wash the rice with water and soak for a hours.
  2. Heat the ghee, add cumin and cloves and fry till it starts to crack.
  3. Then add onion, ginger-garlic paste, tomato, carrot, stir well and cook for a while.
  4. Add the gram masala, red chili powder, turmeric (a pinch of it), fenugreek leaves, and mix well, and cook for a while.
  5. Add the rice with sufficient water and cook well with the closed lid.
  6. Check after some time whether the rice is cooked well?
  7. The Fenugreek carrot green Casserole is ready for you, garnish with coriander and serve hot with Curd.
