- 1 tbsp oregano
- 1 tbsp basil

- 1/4 tsp black pepper powder
- 4-5 cups vegetable stock (or water)
- 1 cup lasagna noodles (broken into pieces)
- 1/2 cup paneer or mozzarella cheese
For garnishing:
- Fresh basil leaves (optional)
- Grated cheese
- 1/2 tsp of garam masala (optional)

Method:
- Heat oil in a large pan. Add onion and garlic, and saute until that turns to light golden and soft.
- Now add carrots and capsicum. Sautรฉ for 5 minutes till the vegetables turn slightly soft.
- Add tomato puree and tomato paste. Mix well and cook for 2-3 minutes.
- Add red chili powder, oregano, basil, salt, and black pepper powder and mix.
- Now add vegetable stock or water and let it boil.
- Add lasagna noodles pieces and cook for 10-12 minutes, till the noodles turn soft.
- Bring the soup to a slow boil on medium flame. Add more stock or water if required.
- Lastly, add cottage cheese or mozzarella cheese and mix lightly.
- Serve hot lasagna soup garnished with fresh basil leaves and grated cheese.
